Who Loves Ya Baby-Back? Recipe courtesy of Alton Brown Show: Good Eats Episode: A Rib for All Seasons 2 plates all pork chops pork Baby Dry Rub: 8 tablespoons light brown sugar, pressed 3 tablespoons kosher salt 1 teaspoon pepper soup powder 1 / 2 teaspoon black pepper 1 / 2 teaspoon cayenne pepper 1 / 2 tsp Tea jalapeno seasoning 1 / 2 teaspoon Old Bay seasoning 1 / 2 teaspoon rubbed thyme 1 / 2 teaspoon onion powder Braising Liquid: 1 cup white wine 2 tablespoons vinegar white wine 2 tablespoons Worcestershire sauce 1 tablespoon honey 2 cloves garlic, chopped Preheat oven to 250 degrees. In a bowl, Mix all dry ingredients and mix well. Place each piece of pork ribs in a piece of sturdy aluminum, the shiny side of paper aluminum down. Sprinkle each side generously with the rub dry. Pat dry rub into meat. Refrigerate the ribs for at least 1 hour. In a microwave-safe bowl, combine all ingredients for the stew liquid. Microwave on high for 1 minute. Place ribs in a baking dish. Open one end of the blade of each slab and pour half the liquid stew in each packet of aluminum foil. Tilt the baking sheet to evenly distribute the stew liquid. Cook the ribs in the oven for 2 1 / 2 hours. Download stew liquid medium saucepan. Bring the liquid to a simmer and reduce by half or until consistency of thick syrup. Brush the glaze on the ribs. Place on grill just until the glaze caramelize slightly. Cut each slab into 2 parts of the rib bone. Place the remaining hot frosting in a bowl and toss the rib portions in the glaze. * This recipe makes several batches of dry rub. If you need more friction which can be extended by any amount, while the ratio of 8:3:1:1 remains the same
